  • 2 cloves of garlic, minced
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • Vegan Parmesan cheese for garnish (buy shredded cheese like this from Trader Joe’s or make your own – recipe below!)
  • Fresh basil leaves for garnish

Instructions:

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the vegan meatballs to the skillet and cook them according to the package instructions until they are browned on all sides.
  4. Pour in the marinara sauce and add the dried basil and oregano. Stir well and let it simmer for a few minutes.
  5. Season the sauce with salt and pepper to taste.
  6. Add the cooked pasta to the skillet and toss to coat it with the sauce.
  7. Serve the vegan meatball pasta in bowls, garnished with vegan Parmesan cheese and fresh basil leaves.

💚 Vegan Parmesan Recipe:

  • 3/4 cup raw cashews
  • 3 tbsp nutritional yeast
  • 1/4 tsp garlic powder
  • 1/2 tsp onion powder (optional)
  • 3/4 tsp salt (adjust to taste)
  1. Simply blend all the ingredients in a food processor until you achieve a fine, cheesy texture.
  2. Sprinkle generously over your pasta, and voilà! You’ve got scrumptious, dairy-free Parmesan that’ll satisfy your taste buds and leave you feeling nourished. 🍽️✨

Ingredients:

  • 1 vegan pie crust (store-bought or homemade)
  • 1 cup of firm tofu, drained and crumbled
  • 1 cup of unsweetened almond milk (or any plant-based milk)
  • 2 tablespoons of nutritional yeast
  • 1 tablespoon of olive oil
  • 1 small onion, chopped
  • 1 bell pepper, diced
  • 1 cup of spinach, chopped
  • 1 cup of cherry tomatoes, halved
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and spinach. Sauté until the vegetables are softened.
  3. In a blender, combine the crumbled tofu, almond milk, nutritional yeast, salt, and pepper. Blend until smooth.
  4. Place the sautéed vegetables in the bottom of the pie crust.
  5. Pour the tofu mixture over the vegetables.

  7. Bake in the preheated oven for 35-40 minutes or until the quiche is set and the top is lightly golden.
  8. Allow it to cool for a few minutes before slicing and serving.

Hearty Lentil Potato Soup

When the wind is howling outside, and the snow is falling, there’s nothing better than a steaming bowl of hearty lentil potato soup. This wholesome creation marries the earthy goodness of lentils with the comforting charm of potatoes. It’s warmth and coziness in a bowl!

Ingredients:

  • 1 cup of green or brown lentils, rinsed and drained
  • 4 cups of vegetable broth
  • 1 cup of diced potatoes
  • 1 cup of diced carrots
  • 1 cup of diced celery
  • 1 cup of diced onion
  • 3 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste
